We freeze tomato puree in quart bags.

We blanch, cool (cold water), peel, and puree in a Vitamix blender, and freeze in qt bags. 14 qts so far this year but more in years past. We like it better than store bought plus it doesn't have added: salt, preservatives, sugar, or other additives.

I've used some over 2 years old and didn't notice a difference.


Otherwise: Bacon/lettuce/tomato sandwiches of course and tomato pie are great.

Every year, I say I'm going to make homemade ketchup. I've made my grandmother's once and it was so good. She used to make it all the time. Very different from your store bought versions. I believe her recipe is in the recipe book. You have to guess a bit on some amounts, but it works out fine.

I use them in any sauce or starter where one uses onions and peppers. So lately, that has included semi-mashed potatoes, corn, and ground beef tacos.
