Might try some with chicken?

We’ve done it with tofu. It has 10g of protein per half cup.

I've used smoked turkey legs, and cut the bones in half to make the broth. It is outstanding. Still included sausage though.

Yep, did something similar for a work potluck. Received very positive feedback and a couple of marriage proposals from the porcine intolerant.
smoked turkey legs, stock made with smoked turkey necks, sings and tails, smoked turkey sausage, & diced smoked turkey breast from the deli. Had them slice it 1/2" thick so I could dice it.

Red beans with a piece of fried catfish is legit. Obviously not in the pot together.

I don't do any protein. Get your seasoning right and you dont need it.

Paul Prudomme’s Butter Bean Recipe
Try Paul Prudomme’s butter bean recipe. A classic dish that his restaurant serves for French quarter fest. Absolutely delicious. The recipe uses chicken but also says duck can be substituted

Beans are one place I can’t go meatless. The pork fat is what makes them so good.
I’m about to cook up a big ole pot of pintos with lard-y goodness
