I always thought that type of restaurant, with it's higher aspirations for it's food, was not right for the WW2 Museum. Most people visiting the exhibits aren't interested in that "high falutin" fare. The restaurant doesn't need to be a destination in itself, the museum is a big enough draw.
Put something in there like the Messina's they had at the RiverWalk, and they'll make a bunch more money. Folks could get a taste of Louisiana food and still have plenty of options for mid-westerners who think they only like bland food. Maybe more old-fashioned diner type food.
And as for the soda shop, you don't need to be a celebrity chef to run that.
Bottom line is they can do a much higher volume with more modest food and make a lot more money.

If I had to guess, the reason the contract is not being renewed is because the museum wanted a larger stake in the revenues based on increased volume of visitors. I am sure it has very little to do with whatever food is being served in the place.
They'll probably turn it over to a Sodexho type outfit, who will just provide food prep, service, and management for a fixed fee.

I don't know. The 2 times I went, I don't recall seeing that kind of food, except for the $15-for-3 sliders which were the cheapest thing I could find. If they did later add the items you mentioned, it just goes to prove my point - that is the kind of food they should have been serving all along.
And to me, the place looked more like a fancy bar that also happened to serve food. That's totally wrong for that spot.

Agreed. Just a business decision to cut out the unnecessary overhead. I don't think Sector or Soda Shop being specifically Besh ventures draws enough additional business to warrant the contract they had with them.

Exactly. Plus I think some "museum visitors" may not like the idea of a happy hour next door.
Lots of locals go just for the drinks and food.
