With my cast iron and enameled pieces, should I still search for vintage Magnalite?

What values does it bring to my cooking collection?

What does it do that my big cast iron roasters cannot?

I like cooking in the giant magnalite dutchoven. I have a small one as well, that is good for braising.

There’s a few Guardian pots with glass lids, I need to clean them up & use them

Magnalite Pots are cast aluminum and the internet is full of the evils of cooking in aluminum That said I have had many a fine meals out of them. but don't use them any more. The older you get the more you worry bout stuff like that. Cast iron the trace you absorb is good for you cast aluminum not.

I have an old school made in America Magnalite Roaster and a knock off McWare from Mammou made in China. I dont find any difference in the 2.

The Magnalite is thinner and lighter than the cast iron and is more quickly responsive to increased or decreased heat, in other words, you have more control over the direct temperature of what you're cooking. The surface is also smoother and you can brown meat more easily and whisk a gravy to the desired thickness and color you're trying to achieve.

As for the very large roasters that are used for gumbos and jambalayas, I personally prefer either a big cast iron or the All-Clad stainless because it holds heat better and is more evenly distributed.

The originals are good quality and last forever. You can burn stuff in em, like rice or whatever and you can scrub the hell out of em with steel wool and they come out nice. You can't do that with enamel coated cast iron or stainless steel.

Curious, does Magnalite have a particular tie to Louisiana?

I only ask because I see it discussed on here more frequently than any other board/website/etc.

If they do, it must be with South Louisiana because I never heard of them until I moved down here.

I remember reading somewhere that over 50% of the pots produced around the 70s were sold into Louisiana. I assume because the properties of the cast aluminum pots were good for traditional south Louisiana dishes. Gumbo, Jambalaya, Stews, etc...
