Could be MSG?

I’ve heard here it was some Swanson discontinued chicken seasoning.

I think the wife brought home Calvin's before, and I thought it was good. But if I did have it, I guess I didn't think it was great since I'm struggling to remember if I've had it.

Harvest has a smoked chicken salad which is fantastic, as well as their jalapeno is good too

That chicken salad is awesome, and any time i've brought it to a party where people have never had it before, they will all rave about it and ask where it came from, and proceed to eat it until the container is cleaned out.

What's even more amusing is all my upvotes came after my comment about Calvin slaying moms

Rice City Liquor in Crowley for GOAT chicken salad.

I don’t even like chicken salad, but I’ll eat the hell out of that one.

Da Jalapeno Chicken salad at CHOP's in Broussard is the best chicken salad is the world. Only 4 ingredient..chicken breast, mayo, mustard and jalapenos seasoned with chops seasoning... its not hot at all but has a flavor that keeps you wanting more.
PS..its not cheap at $11.99/lb but it is the best you will ever have....GEAUX GET U SOME!

Appreciate that very useful info. The reason I like Rice City and dislike every other chicken salad is because I don’t like all the excess junk other places throw in.

Those four simple ingredients you listed makes it sound like I would enjoy Chops. I’ll have to give them a shot next time I’m in the area.

There boudin is underrated as well. It was one of my favorites in the Lafayette area. That has been close to 15 years ago though.

i find their chicken salad in a container to be good, not great. but, give me their chicken salad sandwich (small croissants) tray and I'll eat the entire thing before you turn around. Definitely some crack (MSG) in there.

I don't know what it is about chicken salad on a croissant, but I hard agree with this.

FYI for anyone who lives closer to the Highland/Lee area than Corporate/Jefferson area: Calvin's owners' daughter no longer has the food truck and instead has a brick and mortar location on Highland and Burgin (tucked away next to that vacant antique building) where she sells sandwiches, breakfast, salads, etc. She has Calvin's chicken salad and pimento cheese in containers in a grab and go fridge.

Here's an old post to another old post.....

don't have the recipe, but I've come close at least in texture and while it tastes great, it doesn't taste exactly like Calvin's. Below is one of my old posts on how I make it.

Chicken Salad Post

It's also possible that Calvin's uses their rotisserie chickens to make the chicken salad. I bake chicken pieces for mine these days. Line a baking sheet with non stick foil and it's easy clean up. (Save the drippings for another dish. I freeze them.)

Try this:
(You can reduce the amount in half if you like. I make a lot at one time.)This is as close to Calvin's as I've gotten and the last time I made it, I had to give the recipe to 3 people, one of whom is a chef.

Makes almost 2 loaves of chicken salad sandwiches if you're going for sandwiches.

6 lbs bone in, skin on chicken pieces, all white, all dark or a mix.
1 1/2 sticks butter (optional)I've used it and not used it. Works fine using it.
7-9 hard boiled eggs
Mayo to taste-just enough to make the mixture moist and creamy, but not heavy on mayo.
1 10oz jar sweet relish
3-4 celery stalks, finely chopped
3-4 squirts yellow mustard
4-6 dashes Worcestershire sauce
Salt and pepper to taste.

Preheat oven to 350. Season both sides of the chicken. Put on foil lined baking dish or in casserole dish. Cover with foil and bake about 1 1/2 hours or when chicken is cooked to your liking. I forgot to cover a few times and that worked just as well. You do get some good juices when it's covered and I save those for future use.

Let the chicken cool and then remove the bone and skin. Finely chop chicken in food processor. I use the pulse on the processor. Don't overdo it as the chicken will become gooey. It should be dry, but finely minced. Chop the hard boiled eggs in the processor. Just pulse a few times. Mix chicken and eggs together in a large bowl. Add remaining ingredients. It's better after having been refrigerated about 3 hours or so until cold.
