Boneless ribeye about 2 inches thick cooked more rare than medium rare.

Preferred is ribeye or flap meat(sirloin flap). The flavor and texture of flap is very similar to a ribeye cap.

Thick 2-inch T-Bone, seasoned, smoked low and slow for a bit, then seared over hot wood/coals to a nice rare plus to medium rare.
Number two choice would be a flat iron, seared in black cast iron pan.

Used to be NY strip or ribeye, but I’ve come to love prime filet that I get from Costco. I’ll take any of the three.

I like Ribeyes but they are hit and miss depending on the cut and amount of marbling.

I'm a fan of a 1 1/4" thick New York Strip, Sous Vide to a med-rare and seared on a hot charcoal grill.
