Flank steak is the best value, IMO. More tender than sirloin, leaner than ribeye, much better flavor than a Strip.

Don't let people know this, the price will go up.

Agreed, other than going to an online source it's not a readily available cut, but it is special.

I spent my first 50 years thinking it was a fatty ribeye, and I still love them. But I think my favorite is a 1.5 inch prime strip nowadays. But I have really been enjoying picanha lately as well as picking out some really nice top sirloins. I wouldnt eat a sirloin for years.

We eat family style steak night nowadays and I really enjoy some of the leaner cuts that are properly seasoned.

I'll eat a ribeye just to eat the cap. Save it like it's dessert for the end.

That's the only way I've ever eaten it. Ribeye is my favorite but a good sirloin cap is fantastic.

I have become extremely partial to a good sirloin. The prime sirloins that Sam's carries are super tender but have more flavor than a filet.

It's not cheap, but Cafe Josephine has a prime ribeye cap on their menu. The one I got last time was 14 oz.

I was at Champagne's last night and they had a sign in the case for rib-eye cap. However, I did not see any in there. I assume they were sold out. I think it was around $35/lb.
