What is your go-to meal

If you are the only one eating? There are a couple of nights a week where my kids and wife are gone with activities during dinner. I don't want to cook a meal for myself but I am looking for new ideas for something quick and good. TIA

Eggs, bacon or breakfast sausage, toast. Can't go wrong with a frozen pizza either.

I usually grill up some boneless chicken thighs. I marinate Asian style one week then maybe fajita style the next. Throw a potato in the air fryer and make some green beans. For the fajita style i will griddle up some onions and peppers with Kinders fajita seasoning.

sauté onion & garlic in olive oil
squeeze in 1 can whole tomatoes and fry a bit
add herbs, salt, juice from can to taste
simmer 10 mins
serve over pasta with grated Parmesan and toasted bread

I'm no vegetarian or vegan, but during the summer heat, my go to was a sliced up ripe tomato and cucumber........Black pepper and MAYBE a little ranch, but not always. Hit the spot and didn't leave me feeling like I couldn't move.

My go-to when my wife and daughter aren't around is some trashy fast food for myself and my sons. Krystal, Taco Bell, Fried Chicken etc. It usually involves something with a stronger smell or is messy, and my wife has an aversion to some smells, so when she's gone, we'll eat the stuff that might have a lingering smell that we usually avoid.

Box of Tony Chacerie's red beans and rice with Rabideaux's smoked sausage. That stuff can salvage almost anything. Then buy some HEB Jalapeño Corn Bread to go with it. I'm happy.
