I've consistently seen this guy doing questionable stuff on TV and the internet, yet he gets a lot of praise.

Didn't he get a James Beard award? Or was that just a nomination ...

Who in here has been to his restaurants?

He's a really nice guy and puts out solid food. Toup's Meatery is legit.

I only met him one time but he couldn't have been nicer. My friend roomed with him on Top Chef and has told me some really funny stories about their time together.

Do you mean he doesn't follow your mawmaw's recipe? He's a chef so he stretches boundaries of traditional.

I've been to Toup's Meatery a number of times. Always a really nice dinner.

Toups south is now closed.

I watch a lot of his Munchies videos, and at first I wasn't a huge fan but he grew on me. His crawfish video was really bad, but I liked a lot of the other ones he made, especially the recent one with the guys from the Meat Hook.

Haven't been to eat at any of his places yet.

He put a roux in jambalaya for one thing.

He's a chef--he's supposed to innovate and be creative. If anything, Cajun/south LA food is the epitome of flexible. So boudin egg rolls, or a fried boudin ball stuffed with cheese are perfectly fine as innovation/fusion, but a fine dining chef who wants to play around is beyond the pale?

I haven't heard anything funky about him.

He's definitely got an affinity for flair (Big knives, loud noises, bold/wild). I do think it's genuine though and not some made up schtick

Like his food, like his restaurant, like his personality. He is a Emeril disciple so he understands that you have to have some flair to be a celebrity chef. If you don't care for his persona don't hold it against him because hes probably not such a ham in person. He brings positive attention to LA and it's food scene.

I have his cookbook, "Chasing the Gator" and enjoy it very much. I've made a few things from it and it's also a fun read. Haven't met him or been to his restaurant, but he seems like a guy I'd want to spend time with at camp.

Cooked his Jambalaya recipe a few times. Came out great.

Why the hate for a roux in Jamb?

He doesn't put tomatoes in jambalaya, the red in the pictures if you google is bellpepper. Plus he's adamant about not mixing seafood and meat in gumbo.
