What do you put on your roasted potatoes?

Roasting some tomorrow and ned ideas of what you think is the best to put on them. Do you put any oil on them or just season them and put them in the oven.
These are the little golden potatoes FWIW. Should I half or quarter them?

Garlic, rosemary, real italian parm. And coating with a little oil doesn't hurt

Usually mix it up, quarter some and half most. A little olive oil, cavenders seasoning...bake until tender. Add some provolone and put back in oven for about 5 minutes or until cheese is melted how you like it.

Quarter full potatoes. Half the babies. Boil them for 20 minutes in salty water. Then toss in colander to rough them up a bit so the oil will find places to stick.. Then coat with oil, garlic, thyme and a few drops of Red Boat Fish Sauce (umami) then roast.

Quarter, toss with oil, salt, pepper, garlic powder and dried dill. Roast at 425 for 25 minutes stirring once.

Cut in uniform chunks, add olive oil and season with salt, pepper, garlic powder, sweet basil, oregano and parsley flakes and toss that all together to coat all the potatoes with the herbs and bake till done to your liking.
Another thing I like to do with potatoes is cut in chunks and brown the off in a skillet in some bacon grease and add sliced onion, minced garlic, salt, pepper and paprika and cook till done.

I toss mine with some oil, kosher salt, a little black pepper, garlic powder, some italian seasoning, a little shaved parm, and some balsamic vinegar. Put in a dish and bake 350 for about 45 minutes or so, then raise the rack to broil for a few minutes to crisp them up.
You could also half a large onion and slice it up and throw that into the dish before cooking. It'll caramelize and make like a little onion jam.

This and some olive oil and parsley. But rosemary is the critical ingredient. I also smush the potatoes when they soften and add a little more olive oil and crank the heat up to 450 to toast them.

Can I use Taragon with the rosemary and garlic? I’ve seen recipes for taragon but I’ve never used it. I don’t know if it mixes well with the other spices or is better by itself. It won’t be fresh, I just have a jar in the spice rack.

Just did them last night. Quartered them, tossed them with powdered garlic, rough sea salt & EVOO, along with chopped carrots. Put in the microwave for 10 minutes on high (stirred at 5m) to soften them before going in the oven.
I'd never did it this way before and it worked well plus saved me from washing a pot since everything was already in a large PYREX bowl.

I'm sure it came out fine but I don't get the need to microwave them or use a pot. They'll cook in the oven

This was my first time doing it this way. They turned out better than just putting everything in the oven since the middles were already cooked, I'm assuming.

I’d go with marjoram over tarragon but whatever you like is perfectly okay.
Btw, potatoes make a great canvas for experimenting with various herbs and spices. Many times when I’ve been in the mood for a late night snack I’ve nuked a potato, cut it up, mashed it with a fork, added butter and salt and pepper and just one single additional herb or spice. It’s a great way to build a knowledge base of what various herbs or spices or ground peppers taste like. (There’s also nothing wrong with mixing mustard powder, ginger powder, garlic powder, and cayenne powder. Nothing wrong about that at all.)
Ever made a tea with just water and bay leaves? It’s worth the effort just to know what herbacious flavor they add to the pot of whatever you’re cooking.

I will often quarter medium red potatoes, oil them, salt, pepper, feta and horseradish. Pretty good.
