I'm with you on this. A good, well seasoned batch of crawfish don't need squat to taste any better than they already are.
Kind of like folks that dip raw oysters in that ketchup based sauce and toss them on crackers to eat------WHY??? A good, fat, salty oyster is great on its own.

The way I eat them the tail meat doesn’t touch my hand. If they are cooked right I remove the tail from the head, suck the head, then pinch the tail and pull meat out with my teeth.
I do at times like to dip a potato in a sauce if it’s available.

Ill sometimes dip them in a lemon from the boil, but thats it and its only when Im slowing down.

I have noticed the places with the best crawfish boilers also are the places where dip is favored.

I have family that moved to Lafayette for college 20 years ago and stayed. They and all their friends always have dip at their boils. The crawfish taste fine without it.

They don't NEED it, I just like it. The flavor profiles compliment one-another. The canes sauce tastes especially good on the potatoes.

A well cooked, well seasoned steak, doesn't need steak sauce.
