In no way would I ever fry redfish if given the choice. Same for drum. Trout is also excellent without being fried. I've broiled catfish too. Tilapia is just meh whenever.

Not sure what is inherently cajun about these items although I suppose you could put a cajun twist on them.

Well, Cajuns aren't exactly known for light meals. We like to eat, and eat well. Historically, Cajuns have lived off the land so whatever is in season is what we eat seasonally.

Summer months, whatever is growing in the garden and whatever we can catch are on the menu. Okra, squash, mustard greens, peas, butter beans, tomatoes, fish, crawfish/shrimp/crabs/oysters, non-illegal/regulated birds(red-wing blackbirds, etc.).

I'm from a lot of different places

I just don't think of a lot of the classics as being traditional summer fare

Just all seems heavy to me

If you were from the country, you'd know that fresh garden vegetables are Cajun summer fare...and redneck fare...and hillbilly fare...not a slight, just an observation.

Fair enough. I just consider that to be among the things that come to mind when I think of cajun food

Maybe some of the things I ate growing up were cajun in some respect and I didn't know it

Smoked pork sausage on a slice of Evangeline Maid bread and a tomato and cucumber side salad tossed with vinegar and salt and pepper.

Chicken and sausage with okra and tomato.

Roast or chicken with rice and gravy with a sliced banana pepper on top of the rice and gravy.

Fried Fish: catfish, bass, white perch or brim.

Fried Shrimp.

Iceberg salad topped with fried crawfish or shrimp.

Corn Maque Choux.

Barbeque Lamb, chicken, beef or pork with Jack Miller's barbeque sauce, rice dressing and potato salad.

Potato salad is a big summertime dish because it's served cool.

Smoked sausage and tomato gravy.

Stuffed or fried eggplant.

Stuffed bellpepper.

Baked sweet potato or candied yams.

An ice cold watermelon.

Chilled sliced cantaloupe.

Homemade vanilla ice cream.

Have had cantaloupe for breakfast the last two days. Glad that time of the year is here again. We go through some cantaloupe at our house. Love it derined, cut in chunks and chilled in a plastic bowl in the fridge. Take top off, grab a few pieces and go on with whatever you were doing when you pass the fridge.

Shrimp Remoulade on some shredded lettuce with some fresh tomatoes and other veggies is light and cold.

You are not allergic to scrimps are you?
