Leftover smoked salmon in a Niçoise Salad. First for me, the recipe called for oven roasting eggs. They came out really good, soft boiled like, after 15 minutes in a 400F oven.

Weird combo, but did a pot roast and some enchiladas for the week so I’m eating both.

I cooked a couple of pounds of white beans yesterday for dinner here tonight. Then this afternoon I whipped up some homemade biscuits to go with the beans.
These biscuits were fantastic! I'll be having one or two for breakfast in the morning!
