Prime rib and lobster tails. It’s our Saturday before Christmas tradition but my daughter had a volleyball tournament late yesterday, so it got pushed to tonight.

Cheddar-jalapeno stuffed meatloaf, twice-baked potatoes, butter beans and freshly baked homemade French bread slathered with Kerrygold butter.
My MIL spent the majority of the day in the kitchen and she did one hell of a job. I'm very full and very happy. I love her <3

Had a nice crisp wedge salad with Blue Cheese dressing, crisp bacon and fresh cracked black pepper.
So it wasn't just a wedge salad but half of a head of lettuce. It was HALF of a small head of iceberg. It was still a salad!

Still experimenting with InstaPot with mixed results . Tonight was a hit, chicken with rice. Served w broccoli and crusty bread

I couldn't live without my InstantPot, and I have plenty of great, easy recipes that turn out perfectly everytime. Happy to share if you want to try some new things!
