Wet batter for preparing fried fish?

I just use flour, seasoning, and beer.

pour beer into it until it looks like pancake batter.

Seems like my my grandpa did something with mustard in it... or I'm imagining things. Ever heard of that?

I like seasoned fish fry and self-rising flour mixed at a 2:1 ratio with enough beer for a thin pancake batter consistency.

Never thought to try mustard in it. I bet creole mustard would be good instead of yellow as well, I may try that out next time. So do y'all just mix the mustard into the flour? Do you use something else like beer to thin it out? I'm trying to picture mixing mustard and flour together and it doesn't seem like it would mix well.

I coat the fish with yellow mustard then dredge so technically it's not a wet batter

I used to do a wet wash of mustard and hot sauce, then fish fry, but as of late, I just make sure my fillets are wet and go straight into seasoned Crispy Southern Fish Fry. I don't dust them until right before they go in the grease. My fish come out light and crispy and I get raves from everyone that eats them. Unless it's fish with a strong flavor, it just doesn't need anything else. I really only fry specks and sac au perch, so it's never an issue

Wife loves the stuff from Captain D's/Long John Silver's every now and then for something different, change of pace ... which is the only reason i ever tried doing my own "wet batter" fried fish.

I used this one from Louisiana Fish Fry ... it was pretty good, i just didn't like the mess it made frying fish that way.

It's my go-to onion ring batter now though.

Fish should be fried in seasoned corn meal.

When frying Catfish I like using KC Masterpiece or Lowry's lemon pepper marinade. My wife he didn't care for fish, loves it now when I cook it like this.

I'll typically beer batter when I'm frying small batches for fish tacos etc not for a regular fish fry.

yea good for catfish.

If you want to taste the flavor of the fish i make a beer batter with flour, corn starch, and baking powder and beer. batter needs to be real cold when you dip and throw in the fryer.
