Depending on the specific type of fish I customize seasoning the corn flour, corn meal, white flour mix I use. Slightly smoother texture but still coarse enough for mouth feel. Usually do it as a shake and bake in either paper bag or large zip-lock whether actually baking, pan, or deep frying. Saves on catching club finger syndrome.
Most of the wet batters (excluding just water) are gonna add a bit of sweetness to the finished product, the sugars getting caramelized. Another thing to consider in your seasoning mix for a wet batter and one of the reasons malt vinegar goes well with wet battered fish, sweet/sour play.
