I’m eating at one now for the first time in a while. Man I forgot how good it is.

Great simple down home atmosphere too. Everyone is chill but friendly, place is hopping yet peaceful. Very old school.

Food is simple but delicious.

I went to one the other week for the first time in about 5 years or so and enjoyed it. Their gravy biscuits are pretty good, and there's nothing like getting some of their hash browns with onions.

It seems when I go in the ones around here there is almost always an air of desperation and fear and the workers are on the verge of fighting each other.

I served four tours of duty and retired as a grill operator first class. It'll really improve your general kitchen skills. The wages were great too (finished at $13/hr + tips).
Prices at WH have risen a lot over recent years and its completely do to labor. You would not believe how many people are too slow, have zero eye for quality to work there, or just plain dumb and cant communicate effectively. Putting grunts thru their paces and running the unworthy off my grillmasters line was the MAIN objective.

Oh yea. The cooks are competitive in an honest way. the way the sales people compete can get very disruptive though, and thats what the boss men are there for. If you let those sales people have it their way they will bully and steal from each other. All kind of things at play other than meritocracy which is the law of the grillmaster's line.

Anthony Bourdain had a great segment where he went to a waffle house with a renowned chef and they raved about how great it was

oh yea. the cooks are very competitive for the pay (promotion, tips, 602 (overtime)). and its decided on nothing but who can hold down the grill best. at a really busy location you'll see 3 cooks on the line. from left to right its Major Meats, Eggs, and Expedite. Major meats is the easiest job, Eggs is the hardest cooking because you handle minor meats and hashbrowns too, Expedite is the hardest job because youre handling minor meats and hashbrowns plus plating. The expediter has to listen real good. during busy hours this position can only be held down by a grillmaster or unit manager.
Each time you climb into a new position its a real sense of accomplishment. you prolly go get a smoke break outside while the major meats grunt beats waffle batter and stacks bacon.

Now the sales people are competitive for pay too, but in my opinion its hardly about skill at all. Every location theres always non-team players profiting from not bussing, not sticking to their section, ringing up takeouts they didnt package, and the meek get trampled while everybody is too busy to notice.

tldr the cooks at waffle house are a talented group inheritors of a military like heritage while the sales people are just a bunch of typical waiters, some good, some bad, some for the team some out to ab use the system.
