Unpopular opinion: Cracklin isnt very good

Not that its bad. I will happily eat it.

But for how unhealthy it is it should taste better imo. Have had it from all the popular places in south LA. Have no desire to buy any when I go to Best Stop or Billys or whatever.

Would much much prefer boudin.

I’m conflicted as to whether I should upvote of downvote this. First instinct was to downvote, but the more I thought about it, for every great piece you get, there’s one or two pieces with hard as shite skin and that bitter no fat taste. For as expensive as it is, it should be the other way around.

Cracklins are not all created equally though. Some cracklins are delicious and some are awful. The good ones are great though.

Hog jowl cracklins are better than pork belly cracklins.

The OP makes a good point. Cracklins may be overrated. They can be a great snack when you get a good batch, on occasion. But they aren’t a food you want all the time. And by the pound, they are typically more expensive than steak. And a bad cracklin is terrible. Not every cracklin is good. They are a food we all want around, but I do feel people overrate them.

This has always bothered me, too. What used to be trash now costs me $19/lb because you threw it in some flour and fried it?

For me, cracklin is one of those hit or miss things. You buy some and you get pieces with a bit of meat, well seasoned and cooked to perfection, then you bite into one that will crack your teeth it is so hard, or you feel it squish in your mouth and release a teaspoon of grease.


Strictly from a health standpoint, it is what I've always called it-----"Heart attack in a brown paper sack".

But I love it. I've taken to doing my own a few times a year since I have a problem paying $15 and up a lb. for it.

The cracklin at the counter of the American Market is severely under rated. Always cooked very well. The cut doesn’t have enough meat for me, but whoever is cooking them knows what they are doing.

Blue Oak keeps theirs under a light too long. The sweetness is nice, but the fat on the cracklin just doesn't hold up. It isn't a bad cracklin, just nit worth it with Toups right across the street.
