If Rudy's BBQ (and I realize that Rudy's isn't the end all be all for BBQ would allow a franchise out here, it would dominate the city for BBQ. I picked Rudy's simply because they are one of the larger franchises for BBQ that potentially would have the capital and resources to expand vs. the local mom-and-pop great BBQ places
Completely agree.

Also pretty good potato salad and love the fixings that come with it

Podnuh’s potato salad is inedible. It’s basically mashed potatoes with mayo and mustard.

This is inaccurate. Smoke Bayou and Offset are both passable in a pinch. Sonny’s is bad.

Used to like Rudy’s when I lived in Texas. Texans don’t like it, because it’s pretty average BBQ. Smoked turkey is fine but everything else is really average. The sausage has no flavor, seasoning, anything.

You could not be more wrong. Rudy's is slammed every day for lunch and dinner. That's not tourists, that's local Texans.

The key to Rudy's is while it is slightly above average Q, you can feed a family of 4 there for sub $50. You will be hard pressed to find another place you can do that at in general, much less a decent bbq joint.

Smallest portions I've ever seen at any bbq restaurant for twice the price.

That's a bad combo.

I was forced to meet family there once, and I knew I'd never be back.

How can you call a place that hasn't even opened yet "passable in a pinch"

Mississippi BBQ is just too sweet, if you don't have diabetes when you eat it, you will when you finish.

There have been a variety of issues with this location.

First of all, it was not managed by the owners of The Shed Ocean Springs. It was managed by the previous owners of the Oasis. They retained the ownership of the building and a large percentage of the business, but management from MS would came around only for the opening month.

Opening week was a shite show, but at least the barbeque was somewhat decent. Management made sure that didn't last long. Cut corners everywhere, and started to add their own items to the menu without consent from MS. The banana pudding was the worst of these. Made with artificial banana flavored pudding and cheap whipped cream.

Consistency went out the window. Pulled pork came out tender and moist, but by the time it sat in a hotbox uncovered for 6 hours, it was like pork jerky. Similar story for most other items.

Long story short... Poor management, terrible hiring, high turnover, drop in quality. Probably the top 4 reasons a restaurant shutters its doors. The Shed checked all 4 of those boxes plus some.

It was a weird deal thinking they could successfully expand/franchise.

Would have been a great concept if the franchisers hadn't insisted that the franchisers buy all the food, well at least the meat, from corporate and simply reheat to serve.
That's why the one in Scott failed anyway...

The way it worked at this location is that sides (all sides besides coleslaw) were ordered from distributing sister company owned by The Shed in MS, as well as sauce and seasoning. The only thing that was really made from scratch in-house was the meat (excluding sausage; it's the Country Pleasin' brand).

Meat is smoked daily on a large pit. The issue was that there would sometimes be carryover after closing, and owners refused to adjust and kept re-serving it the following day. Not the way to do BBQ IMO. Better to sell out daily than serve shite.

Can’t argue with that. The creamed corn is on point. However, I would argue with the OP about it being slammed- the original close to Boerne was a ghost town at lunch the last time I was there. There are better options all around there than Rudy’s.
