The best steak vs the best pork chop

In that comparison, obviously the best steak is superior to the best pork chop.
....the problem is how often do you really get the best steak? Or even a great steak?
Where as the worst pork chop I've had, was still pretty great.
I propose the pork steak, especially the standing rib roast or fried pork butt slice... To be superior to 99% of beef.

The problem with pork is that about 50 years ago producers decided to start breeding leaner animals. You know, "the other white meat." Well, guess what! Fat is flavor. A really tasty pork chop is hard to find anymore.

Go to Dorginac's and get the prime pork chops for $11.00 per pound and cook them like you would a steak. They are better than 90% of the steaks I have had.

I'm not going to disagree. A double cut pork ribeye sous vided, cooled, seasoned and baked in a screaming hot convection oven or broiler is nothing short of amazing. The problem is most people are still overcooking the heck out of pork chops and drying them out. Pork steaks are more forgiving.

Why not? If you buy a good one, just put a little flavor on it and don't overcook. I do mine hot in the smoke chamber with cherry wood, it's never bad.

Since pork is harder to get the right temp, that would be why.
I’m sure I could cook one that’s never bad. But a great steak is just easier.

I take pork shoulders and slice about two pork steaks off the end of it about 2 to 2 1/2 inches thick a piece. Cook them over a medium charcoal fire that usually takes almost two hours constantly flipping them and basting them with a mop sauce. Take them off and slice. Amazing.
