Not saying you're wrong, because obviously you know your abilities better than I. That said, a pork chop is much more forgiving than steak.
I think that was the point of the OP. While a great steak is hard to beat, a good/average pork chop is better than a good/average steak.

Perry's pork chop is incredible. It's a special cut they use. I need to find a butcher that will do that for me.

I went dinner at Flemings in Nashville like 10 years ago with my father in law and ordered the pork chop. It was great.
Still mad I didn’t get a steak and I probably won’t order a pork chop again if I really want a steak. It’s not the same to me. I prefer lamb over pork.
I do enjoy a good pork chop though

took some guys out to Southwood Kitchen in Daphne for work.
They all got the filet.
There was a special on a thick cut bone in pork chop so that's what i got. Hands down the best pork chop I've ever eaten, and easily rivaled the filet. It was so juicy and almost melted in my mouth like a good filet would. I've yet to have a pork chop like that. I've tried making it myself, and i've ordered them at nice restaurants, but none of them were like that one. It had to come from a certain farm of pigs that isn't some mass produced hormoned up pig b/c that meat was different from any other pork chop i've had.
I made everyone else try it, and they were reluctant to but after the first guy had a bite and was like wow, that is really good, the rest of them had to see what it was all about, and all agreed that was the best pork chop they had ever eaten.

An average steak is better than 95% of all ork chops I have ever eaten.

I get these thick pork chops for about $12-14 each. Better than any cut of beef that I can get for a comparable price unless I run across a nice looking chuck-eye.
And honestly better than a lot of the more expensive steak cuts.

From what I gather I think heritage pork chops are more red (see pic above) than the pale pink stuff sold at WM Kroger etc. Other white meat my a$$
