One big difference between Memphis and Tx is brisket (Can't speak for KC). It's a staple of Texas bbq, whereas it barely exist or is crap in Memphis from my experience.

can't imagine the criterion when City Market in Luling, TX doesn't make the list but the joint does. and I'm not knocking the joint, its good.

I judge them on how much they don't dry out their meats. I've had a good bit of dried out brisket at the Joint. I understand it's a tricky thing to do and get right, and I think it's a solid place otherwise, though. The truly "great" places seem to have that figured out.

I ate at Pecan Lodge summer '15. It was very, very good. Just a taste preference, but I think post oak imparts a better flavor to brisket than other woods.

I loved Central personally. And Saws is badass. That said, the best barbecue I've had at a restaurant was at Four Rivers in Winter Park FL, of all places. Tried the brisket, sausage, chicken, ribs, and pork. All absolutely delicious. Surprised it hasn't gotten a little more attention outside of that area than it has.

Been to OK Joes and McClards

need to try more of the Memphis ones. I think OK joes is the only Kansas City one that's not overrated

La Barbecue is the best BBQ I've ever had. I'm too impatient to wait in the line at Franklins but can't imagine it could be much better. I waited about an hour in line but they had free beer/band.

I don't know if I caught Pecan Lodge on a bad day, but I actually had a bad meal. The brisket had such a strong smoke flavor my palate was shot the next couple days, couldn't taste anything besides smoke.

I've enjoyed the places in Memphis, St Louis and KC on the list.

I've only been once and it was on Sat afternoon. Maybe I caught them on a good day but everything was perfect less my simple preference for post oak over mesquite for smoking brisket. Another poster mentioned he was trying some different wood combos now.

Texas BBQ is like the Western Sizzlin of steakhouses. Memphis is by far greater than anything I've had in Texas. Even Birmingham has some damn good BBQ. I've only had two in KC and both were good but not top of the list good. Every time I go to Texas I ask for the best BBQ place in town. I'm always amazed at what those people can eat.
