9-10 years of living in TX and I would have agreed with you. It was very underwhelming.

IMHO- Memphis and West TN bbq is the best, probably because that is what I grew up eating. I could eat a pulled pork sandwich with slaw on it or bbq bologna sandwich everyday of my life.

Coming from a native Memphian- I prefer Topp's BBQ in Memphis over the Memphis restaurants they listed.

I do agree with you in regards to waiting in line at Franklin. I was lucky enough to go 4 years ago and only had to wait about 30 minutes. While it was definitely great, I would never wait 5-8 hours for it when there are so many places that have brisket almost as good with little to no wait. Hell, you could even drive to Lockhart, eat, and drive back in less time than it would take to wait in that line.

I don't remember all of the sides I got at La Barbecue but remember really liking the potato salad (probably the best potato salad I've ever had). I probably prefer a simpler but perfectly cooked brisket. One of the worst briskets I've had was at Tim Love's Woodshed Smokehouse in Fort Worth because he tries being too creative with seasoning.
I think a lot Texas places are weaker with sides compared to others. That said I pretty much strictly judge places on protein.
Best collection of sides I've had was at Sugarfire Smokehouse in St Louis. Their meat was good not great but I'd return just for the sides.

saw's is very, very good
i like Dino, good ribs, but their wings are the best I have ever had.
i have been to several of the texas place and didn't love them
also, people only like dreamland if they haven't been to saw's

Have only eaten there once (summer '15) and the brisket was definitely better than anywhere else I've tried (Kreuz, Blacks, Smitty's, Corkscrew, Killen's, City Market (Luling), Brisket House). I think John Lewis is spending his time now getting his Charleston, SC joint up-n-running so maybe that explains it.

My personal favorite on that list would probably be Snow's. I'm shocked they left out City Market in Luling and Pody's in Pecos. As previous posters have mentioned, La Barbecue is just as good as Franklin. John Muller's in Austin isn't too far behind those two as well. When he's got it right, it's better than Franklin and La Barbecue.
Also, the burnt ends in Kansas City are the real deal. Damn those things are meat candy.

Have you been to Pecan Lodge? Their sides are amazing. They have my favorite fried okra in the world. Although I do agree that most places in Texas just seem to use frozen/generic sides.

I can understand that. Typically, traditional Texas bbq is served with some of the following:
-white bread
-tortillas
-saltine crackers
-sliced onions
-pickles
-avocado
-pinto beans
-potato salad
That said, focus on the brisket, beef ribs and sausage not the sides!

I don't remember the sides I had at Pecan Lodge. Like I mentioned earlier, I probably caught them on a bad day because my brisket had such a heavy smoke flavor. I literally tasted smoke in everything I ate for the next 2-3 days.
