Real jambalaya requires a big cast iron pot and a ton of skill

Jambalaya does not take a ton of skill. Might have a few steps but following a recipe like say the good ones posted on here is pretty minimal in terms of cooking skill required

It's the cooking in the pot that makes it more difficult. If you bake it once you've put it all together it's pretty foolproof, and that is the way a restaurant would likely do it.

Some serve red (creole) and some serve brown (cajun).

Im not partial to red. Joey's in Lafayette offers the red and it known as a top 10 (that is if you like red).

Are we supposed to pretend that Rice & Roux is not just a Jambalaya Shoppe franchise that went rogue?

Creole Jambalaya for the win.

I also agree with Jones. Can't say I ever went to a restaurant for Jambalaya. Maybe it's a side with brunch at some places.

So what, you just throw away leftovers when you make a jambalaya? Wtf???

Think people on this board are afraid to admit they own and use microwaves.

I can not think of a single time in all my years I ever ordered Jambalaya in a restaurant.

And nothing wrong with day old microwaved Jambalaya.

Nor have I.

I do that often. A tad dry but good none the less.

I would and have eaten jambalaya every single day for an entire wk. If it's good, then it's going to continue to be good. You have to put a splash of water over the bowl and then put a damp paper towel on top before putting in microwave.

Yep. And if my mother ever heard me say I would only eat it fresh I would have starved during college. Red beans, gumbo, spaghetti, hell fried chicken. Whatever she gave me was eaten amount of days be damned.

I'll stand up and say it. I own a microwave and I'm proud of it.

But I don't recall ordering it. My kid bought a quart from Alexander's the other day. Nine bucks. My wife's wig flipped.

People who make jambalaya with parboiled rice should be shot.

Restaurants do not get an exemption.

Same here, no problems with leftover Jambalaya. My wife ordered Jambalaya once from a restaurant, Felix's. It was the only thing I've ever sent back in my life.

This is truth. If you use Stadium Rat's calculator, you will be hard pressed to find a better jambalaya in a restaurant.

Just looking at the pics I would think that was a worst list. Most looks like mush. One looks completely dry. Then one with tomatoes. .
