I’m not trained and don’t have a particularly good palette , and I can tell some differences.

Damn baw. I say this with no disrespect but that is an awful take on BBQ. I enjoy a good sauce but bad smoked meat with good BBQ sauce is lipstick on a pig.

BBQ is not all the same. However, I dont taste the nuance this board seems to be able to

I have good (moist and tender), and not good (dry and tough)

So I dont appreciate places like Franklin and such, because to me, there are 100s of places that taste just as good

Not in Louisiana. In Texas, sure. There are probably dozens of places that are truly equal.

TulaneLSU would tell you some of his best memories are of he and his mother slow cooking beef. The details of heat, rub and smoke can't be downplayed.

You're wrong.

If you have to have sauce for your BBQ to be good, then your BBQ isn't good.

However, there is the flip side to this for the people that act like using sauce with BBQ is some crime against nature. That is just as foolish of a take. A proper sauce can be a great addition to wonderfully done BBQ and can enhance things even further.

The key is finding the perfect balance for whatever meat you are cooking. Some cuts don't need and shouldn't have a sauce at all, some items the sauce can really bring them to the next level. BBQ is all about the finesse and balancing act of what you are making.

What truly separates BBQ restaurants (talking about all that are at least decent bbq joints) is their sides.

I have not found this to be true. Some people's techniques are far superior to others.

Wrong right out of the gate. Completely wrong. If you think BBQ sauce is an important part of the equation then just stick to sloppy joes.

Pork butt takes exceptionally well to a mop. A good sauce will rescue a bad pork butt. Can’t say the same for brisket or ribs.

The OP is wrong, with the exception of pork butt.

I disagree. I don't bother with sides most of the time. Just get the meat by the half pound or so.

BBQ ain’t bbq without jack miller’s. You should go to jail if you put anything other than jack miller’s or pig stand on a piece of Chicken or a pork chop or pork steak.
