Everybody can smoke a piece of meat. It gets really juicy and tender and smoky.
What separates one BBQ restaurant from another is the sauce.
Which one has the best sauce? That's the best BBQ.

People have been using this and taking people's money for decades. It's probably good on shoe leather. Barbecue for me is more about texture and smoke flavors.

Best bbq needs no sauce you heathen. Slow smoking for hours is hard and the main driver for tender, flavorful meat.

BBQ is not sauce, it’s cooking the meat indirect, taking your time and loving what you do. And no, everyone can’t smoke a piece of meat and make it tender and juicy. You’re smarter than this.

What stands out for me more than anything at BBQ places are the sides. They can usually all smoke ribs/brisket/pork shoulder, etc. But if you are giving me canned green beans, instant potatoes or canned baked beans to go with my 3 meats, it’s a real turn off.

You've got different smoke rigs, different temps, different woods, different combinations of woods, different rubs, different cuts of meat, different grades of meat, different finishing temps, different cook times.
There are a TON of variables that go into making BBQ.

So with this theory, it is just grilled or cooked meat right? Because you put the meat on a heat source doesn’t make it BBQ then

Even the best bbq restaurants I like a little sauce on the side but don’t want it drenched or mopped on the meat

Brisket without sauce is money, but I am good with dry or sauced ribs. I usually sauce my ribs at the end little bit on the smoker if I am smoking it.
Pork butt is getting sauce, no question, every time.
