I'm thinking about making a veracruz-style fish next week but I'm wondering what I should serve with it.

The sauce has tomatoes, capers, olives so I want something light to complement those flavors.

Y'all are creative, what would you make?

Cube up peeled sweet potatoes put in sprayed nonstick foil lined baking pan . Drizzle w Olive Oil. Mix with hands to coat completely. Generously sprinkle w Cinnamon Sugar. Bake till fork tender. Spray w butter and sprinkle again and serve. Great compliment to all my fish dishes.

Parmesan roasted brussels, asparagus and/or broccoli. Maybe a little yellow squash or eggplant for color.

The best fish side dish is the sticky Asian rice and vegetables GWFins serves with their seared tuna.

I would try to make that. Although it may not go well with your fish sauce. Idk.

Angel hair pasta or a basic rice dish would work well. If you want a vegetable, try a simple pan roasted green bean dish, or steamed broccoli, cauliflower, and/or carrots.

This sounds great. I’d do some mixture of roasted vegetables.

Wrap 4-5 asparagus spears in prosciutto and grill (LINK ) and serve with risoto, couscous or angel hair pasta with garlic, olive oil and parmesan.
