Shrimp Boil Advice Needed

I am boiling 4 pounds of shell on shrimp for my daughters graduation. I plan on using a package 5oz of dryLouisiana shrimp boil seasoning and half a bottle 4oz of Louisiana liquid seasoning. I will start with 1.5 pounds of potatoes for about 20 minutes then add the shrimp and sausage for two minutes. At this point I will turn off the fire and put in a gallon jug of frozen water to stop the cooking and soak for 20 minutes. Will this be good? Any suggestions? Also in the pot will be 6 lemons, a head of garlic and an onion.

Not a bad plan. Taste your water. May need more powder on hand. I would at least have some extra on hand. After the first 5-10 minutes of soaking I start tasting and if they are not picking up enough spice I have added during the soak on prior occasions to reach the desired spice level.

Use a knife to pierce the potatoes to make sure they’re done. Add shrimp and immediately turn OFF the fire. I do not boil shrimp after adding to the 212 degree water. They will cook fine , stir occasionally. Peel and taste test after 3-5 minutes. Pretty sure shrimp are cooked when they reach 120 degrees.

Put your shrimp in at a rolling boil. Remove after one minute and spread them out to cool down and stop cooking.

2 minutes is overcooking shrimp. You don't need to soak shrimp, the most important thing with shrimp is to not overcook them and to keep them easy to peel.

I personally don't like boiling meat, so I wouldn't boil the sausage, I'd grill or smoke it. Even if you like boiled meat the grease from the sausage makes seafood feel weird, I just don't like it. I always make people put any meats in last after the seafood is out.

I’m guessing you mean 40 lbs of shrimp?

I don’t put sausage in my boils. But if you come to my house for a boil and try to “make” me do anything, the most pleasant result is me telling you to leave immediately.

The shrimp and potatoes don’t actually pick up the flavor of the water. Just boil the potatoes in normal water for 15-20 minutes. Add the shrimp at the last minute.

Then dump into an ice chest and coat with the seasoning and shake.

yes. bring to a boil............boil for 4 minutes.........turn off and throw a bag of ice in it. let soak for 20

That's almost as bad of an idea as boiling for 2 minutes and then spreading out to cool. At least you do soak. So yours are mushy and hard to peel, but at least they're seasoned. Shrimp require minimal cooking, but lots of seasoning. That's why the soak is crucial but the boil isn't. Bring water to a boil, cut the fire, add shrimp and soak. Ice or ice bottles helps the soaking process. They're is absolutely no reason to "boil" the shrimp.

Cut your potatoes in half. They will cook faster and pick up more seasoning. 13-14 minutes should be long enough. Drop in your shrimp, when they start floating, cut your fire, when the sink they done.

When you see the space develop between the shell and the meat (about a minute of boiling) take them off the heat and put in your gallon jug. Soak for your 20 and they should be easy to peel.

Nobody's asking the obvious. How many people are going to be eating?

I usually figure 1 to 1 1/2 lbs. of shrimp per person with the sides.

At that rate, you're only feeding about 3-4 people.
