Is there a device that will stir your roux for you, so you don't have to stand there forever? Must be a thing, right?

You can always have a kid and wait about 5 years. Then you'll have one for a little while at least

If you make your roux in the oven, you only have to stir occasionally, like once every thirty minutes, but it takes about two hours to get a really dark roux. Easy peasy (says the person who's only made it in the oven once).

You can make it quickly over high heat ala Paul Prudhomme or in the oven with little effort.

Mix oil and flour.
Put in an oven pan.
Put in oven at 350.
Take out when it gets to desired color.

I would love to have a magnetic stirrer like on a chemistry hotplate. I'm not so sure it would actually work with something thick though, and the stir bar wouldn't keep a roux from burning.

After recently experimenting with jarred rouxed, I'm quite satisfied with the product. Saved time to do other cooking. If it's not dark enough, I'll cooked it more. I also added bacon grease one time when doing shrimp and grits for my gravy. Easy and quick. I'm sold.

I tried it recently as well. Burned it and ruined the whole batch.
Thankfully I bought 2 jars. I was able to get it right the next time.

All I do is create time increments.
Put oil and flour on heat in the pot
Chop onions
Stir roux
Chop green onions
Stir roux
Let the dogs out in the yard to pee
Stir roux
Cut up andouille
Stir roux
Get out garlic and cayenne
Stir roux
Get the idea? I do all the prep while the roux is going.

How low do you keep your heat? That sounds like a great way to burn the shite out of your roux
