Roasted Brussel Sprouts Recipe anyone?

Cut them in half and dash in Olive Oil. Season with sea salt and cracked black pepper. Bake at 350 for 45 mins.

Garlic powder


Do them in a cast iron pan. 400 or so till they get crispy, about 45 mins. Stir every 15 mins or so.

Listen to serious eats. Roast them hot. They are much better this way.

Fam loves this one. I do them in my steam oven but you can do in a regular.

Cut in half. Toss in oil, salt and pepper then roast 25-30 minutes at 425 stirring once.

Thia Chilli Roasted Sprouts- Paul Qui (East Side King) recipe

Ingredients:
1 pound brussels sprouts, stem trimmed and halved
2 tablespoons olive oil
2 garlic cloves, finely minced
2 teaspoons fish sauce or soy sauce
2 tablespoons sweet chili sauce

Directions:

Heat the oven to 400F. On a baking sheet, toss the brussels sprouts in cooking oil to coat evenly. Roast in the oven for 20 minutes, tossing them halfway so they cook evenly. Remove brussels sprouts from the oven and turn on oven broiler to high, with the oven rack positioned in the top third of the oven.

In a small bowl, whisk together the remaining ingredients and pour over the brussels sprouts, tossing to coat evenly. Broil the brussels sprouts for 5 minutes or until the sugar in the chili sauce is bubbling and caramelizing. Watch them carefully so they don't burn! Remove from the oven and serve immediately.

Sprouts cut in half
Olive oil
Salt, pepper, a little Tony's
Balsamic vinegar
Garlic
Lemon juice

Toss and roast at 475 to achieve your desired level of char

I do mine in a SS skillet
cut in half lengthwise and put cut side down a skillet with olive oil or butter or both. let roast on med low till nicely browned on the cut side. stir them around and crank the heat for a few minutes to finish cooking then toss with salt pepper and balsamic vinegar

Halved in the oven with olive oil and sea salt as mentioned, or in the skillet with pancetta.

I do the basic roasted with olive oil and seasonings but sprinkle some parmesan on top when done.

As high as your oven can go. High heat is key.

That sounds like what they serve at Uchi in Houston which makes sense due to Paul Qui's relationship with Uchi/ Uchiko. I can attest that they're fantastic, so much so I've been trying to replicate them at home. I was close but this gets the proportions and method down specifically, much appreciated.

Convection is key IMO. I do mine at 425 on convection setting, which brings it down to 400. Top rack, nice and crispy. Himalayan pink salt, pepper, avocado or olive oil ... rock and roll.
