Question About Eggs in Your Gumbo

I dropped some already-boiled eggs in my gumbo. This is a first for me. Did I do this correctly or is it better to drop raw eggs in and essentially poach them?

Crack raw eggs in the slightly simmering gumbo. Lid and don't touch for at least 15 minutes. If you stir too early you'll have egg drop gumbo. I learned this from a legit Ville Plattion this past hunting season. I'll be dropping eggs from here on out

I've done it both ways, but I prefer to drop the raw eggs in and don't touch until they're cooked like Balls said. I like the uneven texture of them unlike the previously boiled eggs.

Already boiled is fine but I prefer to drop them in raw, maybe just a mental thing but I find they taste better that way.

ETA: plus dropping them in raw gives them the case to get a shrimp/crawfish/piece of sausage stuck in the egg and that's when they're really the best.

Drop a couple raw eggs in uncracked, let them cook with it, then peel them and put them back in. It’s damn good. Tomorrow is rough for other people, but they’re good otherwise.

Gotta poach them. Drop them raw and let them simmer. This is done with red bean gumbo.

It seems to be a much more common Prairie Cajun area thing than NOLA, I've always been told it was a cheap way to add protein to a gumbo or stew. I don't see it often in gumbo but the egg is my favorite part of a shrimp or crawfish stew.

This is the method, but I'd wait 30 minutes with just a simmer. Mother and grandfather were from Ville Platte.

Not gumbo, but my shrimp and egg stew with dropped eggs

This is how I do it as well, gonna have to try dropping them next time.

Can confirm from VP and I drop and absolutely do not stir for 20-30 mins. I usually add my green onions then and just let the fire go out and stir after about 10 mins and serve from there.

It must be a VP thing. My grandfather was from there. I love “drop eggs” in my gumbo.

It’s an easy and cheap way to add protein which isn’t near the issue it was when he was a kid, but it’s just damn delicious .

My Cajun grandmother used to put boiled eggs in her chicken and sausage gumbo.

Not crazy about it in chicken-sausage or seafood but we make a red bean gumbo and eggs are great in that.
