Quality Italian Sausage in NOLA

Man, I'm sick of grocery store Italian sausage. Anybody know of a reliable, quality brand?

I'm trying to elevate my pizza game, but this is holding me back.

Depends how you like it. There are recipes out there with more fennel seed, some have more herbs, some use red wine.. look up Italian sausage ground pork and skim through a few. If you have a mixer it’s fun and easy

Yes. I got tired of inconsistent quality at the stores and decided to start making my own. It took a couple tries to get my recipe to suit me and I've probably make close to 50 lbs. of it by now and I've had no complaints from folks that have eaten it.

I don't case it up since I use it in making red gravy and will roll out small meatballs of it, brown it off and add it to my gravy. I'll also use it the same way in my lasagna and will make omelets with it on Sunday's for the wife and I.

I do case up my green onion and hot sausage since I grill them most of the time.

While I’m sure Piece of Meats sausage is fine, way too close to the best to not go to Terranovas.

I’ve had other Piece of meat sausages and go for their sandwiches. I like the place. I live two minutes from there. That being said I’d rather support Terranovas when it comes to certain things. Family run neighborhood markets are a relic but also bc they are very nice ppl as well.

Rouses use to have a very good fresh Italian sausage. Been about a decade since I last had it though.

Their Italian is passable, but their hot sausage is very inconsistent at the Rouses on Carrollton Ave. in Mid-City.
