Terranova's is real good..
If you are in the area Dorignac's has some good Italian sausage. But it is frozen. I think it is made local and in a cryovac package.

At how much per pound? I've been in there a couple times and have found their prices to be 20% or more over most other places, and their price on the cracklin' is downright stupid.

You are also going to want some of this pepperoni

Don't slice it too thin.

My wife thought I was crazy when I spent $40 on pepperoni. Then she had some.

Danny and bonnies an the wank makes good craklin but not worth the drive though.

Coarse ground pork, kosher salt, black pepper, fennel seed and fennel powder. You can get a 1 pound bag of the seeds and powder at the international market in Metarie for about $3 each.

This is what I do, but I buy whole pork butts and grind my own, then season it before casing some of it up and leaving some of it uncased.

I won't buy store made sausage again as long as I can make my own.

homemade is best

my grandfather used to make Italian sausage every Thursday in his butcher shop on East Blvd in BR. He’d save all the pork trimmings from the week and grind/stuff with a hand crank machine into natural casings. I’ve never had the like since, still chasing that dragon

I bought 6 pounds of this for about $44.

Margarita pepperoni is top notch. A little more anise and pepper than Hormel. I would like to slice it thin, but it's not easy to do.

I don't know if the taste is worth the price and labor of slicing. Hormel is common, but it has great taste and is already sliced the way I like.
