At the house where the temperature is fairly constant, no. At the camp with wild swings with temperature when no one is there, yes

I do at home but not at the camp. Not sure why I think its because the wife puts it in the fridge and i tend to put something back where i got it. She also has an obsession about expiration dates, ive eaten things a year or more past the sell by date.

I don’t think it will go bad as in make you sick. But it will certainly separate and turn different colors a lot sooner if left unrefrigerated. Especially Tabasco. It gets all cloudy and weird looking

I don't mind the change. Though I'm not sure if it means it's oxidized or if it has just continued to ferment.

No. I make my own hot sauces now and never refrigerate them and didn't do that prior to me making my own.

You never see them refrigerated in restaurants and they are always on the tables in the condiment trays.

Hell no. It's called hot sauce, not cold sauce
