I thought about Great Notion, but Block 15 wins out for me because of their BA stuff. Great Notion just celebrated their one year anniversary, so I suspect that they are going to be coming out with more BA stuff, soon.
When making my choice, I think about what kind of IPAs, Stouts/Porters, and sours that I would be drinking. Block 15 is one of the few breweries that makes both great NW style and NE style IPAs, has fantastic dark beers and BA stouts, and has some really fantastic and innovative sours in their lineup.
I love the small breweries and enjoy the fact that I can go and shoot the shite with the brewers and watch them do their thing. No tour needed, I can see everything from the bar...
Great Notion may be my answer next year, though, especially after they open their new place on the NW side of Portland.

Toppling Goliath has to be up there if the criteria is variety.

I would probably have to pick Hill Farmstead
But I would be completely content with just Great Raft as well

Hill Farmstead first. Top-5 for hops, IMO. Top-5 for barrel program. Brews quite literally everything, does all of it well, and a lot of it exceptionally well.
