Made a few batches of rocky road yesterday, super easy but I love the stuff

Melt
2 cups chocolate chips
2tablespoons butter
1can sweetened condensed milk

Then pour over a mixture of 2 cups roasted peanuts and 6 cups marshmallows, mix and press in pan and cook in the fridge

still looking at recipes
for Xmas eve I’m thinking about paella if anyone has a good recipe. I have a nice paella pan I’ve never used and a bag of the good Spanish rice

also just saw a recipe for homemade dark chocolate peanut butter cups that looks easy

My best advice is prep everything ahead and have it ready like you're filming a cooking show. The paella comes together quickly. I used blended rotes for my sofrito. Use beans, peppers, seafood, and some chicken thighs.

Made some practice ones today and they were less than exceptional

From yesterday

I’ve baked over 500 cookies of 12 different varieties and am exhausted beyond words. I’ll post later.
Have to go caroling now.
Have cookies and ornaments to distribute.

Did one family dinner today, managed to tweak my back. But I’ve got brownies, pecan pie, and leftover boudin.

Making 15 pizzas from scratch for a friend Christmas party tomorrow night(48-72 hour Biga Pizza Dough from FWSY). Bought a 5 pound bag of Grande 50/50 mozzarella/provolone cheese. We'll see how that tastes.

Prime rib on Christmas day

Also attempting a Croquembouche for desert

Cornbread dressing, sweet potato casserole, rolls and spinach Madeleine in freezer waiting for defrost for Christmas Day. Ham, mashed potatos and gravy wil be cooked on Christmas Day. Tomorrow will prep spinach and artichoke dip for Christmas Eve to be served with a catered sandwich tray and mini meat pies. We will also have Jerry Lee’s boudin and head cheese for Christmas Eve. Christmas Eve morning I wil make my strawberry cheesecake and chocolate pie for Christmas Day as well as my crawfish turnovers to serve for Christmas Eve.

Mexican corn dip is ready. Pretty good and spicy. It just made a metric ton and there’s only 6 of us tomorrow.

Is this not a little easily on the rib roast? Pick up our 10 pounder tomorrow. I was going to prep it a day before with this stuff: LINK

Appears to be a spice mix of salt and pepper. Check that, ton of rosemary, garlic, salt, and pepper.
