Nah 48 hours is fine for it to sit in the fridge. Only salt until cook time though

It's incredibly simple. When I first tried I kept getting hung up on the whole softball stage thing. After a few batches you are able to judge when they're ready without any testing.

3 cups pecans
3 cups white sugar
1.5 cups brown sugar
1.5 cups butter
1 cup milk
2 teaspoons vanilla extract

Put it all in a pot and cook over medium high. Once it's starts bubbling and boiling reduce to low/medium low and keep cooking until it cooks down and thickens. It's usually like 12-15. Then turn the heat off and stir for a few more minutes. Done.

Lightly salted and in the fridge now. Will rub with my prime rib rub and throw on the smoker tomorrow. A little concerned that I might over salt, but I’m sure it’ll be ok.

I just finished a poule d’eau pot pie for tomorrow and we are now getting buzzed before we attempt the paella

Thanks for the recipes cgrand & geauxt
I used ingredients in cgrands recipe & instructions from geauxts

They were super easy & taste awesome

It's essentially dry brining it. It breaks down the surface proteins to allow the fibers to retain more of the moisture.

They always put out a good Christmas lunch and dinner offshore. Tonight they will have snow crab legs and whole hog!
