Need ideas for a dish that takes a few days

I’ve got a rare three day weekend coming up and I’m entertaining ideas for a dish that would involve a long preparation.

Croissants from scratch, bonus if they’re sourdough/wild yeast

beef wellington.
1st day.
Sear and then chill a beef tenderloin.
Just a simple salt, pepper and Parsley coat.
Chop a mushroom medley (oyster, crimini, and portobello) marinate in garlic and soy
2nd day
Cut an 8oz chunk of that tenderloin and wrap it in clear film and freeze
Sautee mushrooms. Add beef base.
Then puree
Make a puff pastry from scratch. (Use that croissant recipe from earlier in the thread)
3rd day.
Roll out puff pastry
Put large portion of tenderloin on it.
Smother in mushroom duxelle
Wrap pastry around and seal using eggwash.
Bake at 315 for 45 minutes.
During that pull 8oz portion of beef from freezer. Slice paper thin and drizzle with olive oil. Salt. Fresh cracked black pepper and smashed capers
When wellington is golden brown pull.
Let rest for 8 minutes.
Slice your portion and top with your carpacio beef.

Crawfish Bisque would be my first choice and I see someone else's too.
Next in line would be "Turducken" where you need to debone the birds----turkey, duck and chicken. Use the bones to make a stock and use the stock to moisten a couple of your stuffing choices.
I use oyster dressing in the chicken, andouille dressing in the duck and cornbread dressing in the turkey. Put all the birds together with the chicken inside the duck and the duck inside the turkey before closing up the turkey's back and baking.
