Looking to add some new stuff to the kitchen. Any stuff you use all the time? Really looking for new good wooden spatulas etc. Just got new chef knife and need a good cutting board too.

The things I use the most are my knives, cutting boards, and spring loaded tongs.

Half sheet pans with wire rack inserts.
Double mesh strainers.
A steamer basket.
Instant read thermometer.
Bar towels.

Some system to sharpen that knife you got. Once I started getting kitchen knives razor sharp, my prep work took a quantum leap. I prefer Arkansas whetstones and a smooth steel. I know that’s not everyone’s cup of tea, just my choice as I enjoy sharpening that way. Get something that works for you and gets em shaaaarp.

I love my salad shooter. I have had it for years and it comes in handy for all kinds of things. I use it for grating cheese, shredding veggies like potatoes for hash browns, carrots for a carrot salad, etc.

A few months back I bought one of these tabletop cheese graters and find myself using it about once a week. We buy block cheese and shred it fresh, I've used it to slice sweet potatoes for homemade chips, sliced cucumbers for pickles, shredded carrots for slaw, etc. Nifty little thing to have.

Serious Eats and Cooks Illustrated/America's Test Kitchen provide excellent reviews, recommendations, and testing of kitchen equipment. SE is free/Cooks is subscription. I recommend utilizing those resources to help figure out what you might need.

Here's what I find handy...
Infrared thermometer for surface temps
Thermapen
Bench scraper
Fish spatula
Offset spatula
Zester/grater
Spider strainer
Saucier - maybe my most used pan in the kitchen. I have 4qt at All Clad
Quarter sheet tray - I used the smaller pan for prepping meats or smaller veggie trays. Good balance with the large half sheets

I like a rice cooker better, but instanpot's typically do pretty well with rice.

We make broth with our instant pot. Save your veggie scraps in a ziploc bag and keep it in the freezer(onion peels are great and give off a lot of flavor, broccoli stems, mushroom stems, celery leftovers, carrot tops, etc). Save chicken bones/carcass and extra skin, fat, etc. Those go in a big ziploc in the freezer as well.

Add herbs an seasoning and pressure cook for 45 to an hour - different recipes are online. Then strain into jars for saving in the fridge for quick use or freeze.


Another tool I haven't seen mentioned is a mandolin. Great for thin slicing.

Also, a large set of different sized stainless steel bowls. I use those all the time, especially for brining.

They do come in handy for soups and sauces and I use mine more than enough to warrant having it.

Also good knives along with the tools and a knack for keeping them sharp.

I also use my chinois often to strain stocks and it's a must have for me.

Quality pots and pans and I've gone to all heavy duty stainless steel after years of coated pots and pans that eventually fail.
