When I was a child, and spoke and ate like a child, I put the ginger on top of the fish and ate it in one swoop. But now that I have put away the childish things, I eat the ginger at the very, very end.
I also eat the ginger by itself if there's any left over. The worst offender for being paltry on the ginger giving is Sake Cafe. I always have to ask for more ginger.

Correct. Ginger isn't to be eaten with sashimi, only with nigiri and rolls.

I've never said I haven't eaten at chain restaurants. I prefer not to, but sometimes I will dine with one of my upstanding friends who enjoys Sake.

Eh, people like what they like. I don't eat rolls because the true flavor of the fish is masked.
I too eat mostly nigiri (sake, maguro, hamachi) but I like rolls too. I know that many say that the old fish ends up in rolls. No doubt it is easy to mask less than fresh fish in a roll, but the rolls I order usually have shashimi on top of them. I like the different flavors and textures of these rolls.
