I use it in jambalayas and I'd bet that it's the most used sausage in jambalaya by far. Hot dogs are emulsified, bro. I've seen Manda, they grind boston butts, yet y'all call them hot dogs. Veron's is a good company too, good for them.

mandas is trash, no respectable cajun uses that crap, its for yankees who are pretending they know how to cook cajun foods

Most of us in South LA are spoiled with excellent regional options for smoked sausage. That being said, Manda is pretty dang good for a mass produced product and doesn’t shrivel up like a lot of other brands.

I've bought some Manda pork in 1.75 lb packages that's a solid product. I double smoke it and it's functional.

I agree with this. Rabideauxs, dons, Guillory’s, and Mr Ts are my go to when I make gumbo and RB&R but Mandas makes its way into my jambalaya and crawfish boils every once in a while. It is definitely a different product from top tier smoked sausage but it has a distinct flavor that I do enjoy in some applications.

Oak Grove smokehouse has the best jambalaya sausage.

This place always seems to get overlooked. I used to go there often when I lived in BR. He sells cure and casing also.
They have a damn good head cheese also.

I’ve learned many on this board simply hate the popular mainstream companies. They always try to act like they are better because they use that one product, company, business, or restaurant that nobody else has discovered yet.

This thread is a great example. Instead of just saying they prefer another brand, they have to poo poo on the popular brand. FDL pizza is the same way. Instead of just saying they didn’t like the pizza, they try to convince you of how terrible the whole place is and you’re an idiot if you like it.
