Mac and cheese is just not worth the effort to do homemade.

Used the Alton Brown recipe off of food network website last week and it came out great. Guess it may be more of a casserole, but I used bowtie pasta (oh, I fancy) and it worked awesome.

Would use it again.

Boil shell or elbows, drain. Add 1/8 cup a milk, 2 tablespoons of butter, and about 4 or 5 slices of American cheese. Salt and white pepper to taste.

Hard to estimate amounts since I always make different amounts of pasta. This is mac and cheese, not sure wtf y'all are all doing?

martini, i tried a few times (without a recipe to go by) and failed miserably as i was just dumping in a bunch of cheddar or mozzerala cheese and it hardened up and tasted awful. i think getting the cheese to be 'creamy' is the hard part about doing it from scratch if you don't know how to do that.

i just assumed pasta, butter and a shitload of cheese would do the job

that is simple mac n cheese


I like to also add:

bacon
shallots
garlic
white wine to deglaze
2-3 other cheeses
breadcrumb and parmesan crust

Mac n cheese is quite possibly the easiest food to make.

Pasta
milk
butter (not always)
cheese

mix

add what ever the eff you want (i.e. different kinds of cheese, breadcrumbs, bacon, cream cheese, chives... the list goes on and on..)

win.

Go to grocery store, buy Stouffers mac and cheese, profit.

Serously, even homemade mac rarely tops Stouffers and is probably not worth the effort. You can disguise the mac any way you want so people dont realize its Stouffer's. hell you could even throw more cheese+bread crumbs on top of it.

It's not going to be creamy without making a bechamel, or white sauce. You need milk in dat dere mac 'n cheese.
