Liver and Onions... you either hate it or love it...

Darla’s WFDT post earlier this week got me craving liver and onions. Actually never cooked beef liver myself.
My mom did when I was growing up. I liked it okay then, but it wasn’t my favorite thing.
Really like how it turned out...

I have actually never had liver and onions. It’s not something I’m necessarily itching to try, but I’d give it a shot.

Usually the bacon is incorporated in it. Your approach to that is interesting, though.
I love the dish, but have not had much success the couple of times I’ve tried to make it. It comes out too tough.

Yeah I wanted the bacon on the side. But I did cook it in the same pan so started with a film of bacon grease.
From what I read, it is easy to overcook and become tough and bitter.
I barely cooked it over a minute per side with butter and the leftover bacon grease.

I'm a huge fan. Do yourself a favor and opt for calves liver, and one can never have enough caramelized onions...make more than you think you'll need.
A very cost effective dish too. Don't overcook.

Funny. Darla had me seeking it out at Rouses and I found bags of the frozen calf liver. Going to have to get some. For $3.99 a bag that price can’t be.

What I found was frozen too. Packaged nicely in individual cryovacs.

It's not for everyone, but I like it.
If you marinate it in buttermilk or milk + siriacha, you will get rid of most of the flavors that turn some off.
I've done it several ways, but one easy way is to cut it into strips and brown it with some garlic and onions in a Dutch oven. Then deglaze the pot, add more onions, mushrooms, and cream of mushroom soup, maybe a dollop of sour cream. Serve over noodles.

I've tried it more than a few times in my life. No matter how much it may be camouflaged, I can never get past the second bite. Everyone else in my family always seemed to be okay with it.
Odd that I have such a distaste for liver smothered or fried, but I'll stuff myself full of boudin.

I don’t eat it often but I once had it as the lunch special at Le Cinq Restaurant in the George V Hotel in Paris. Absolutely delicious but super rich.

Stockyard cafe used to do a liver and onions and mashed potato lunch special that was legit. Tons in Broussard has a good Liver and onions lunch special on Tuesday.
I prefer liver and onions and grits.

When I was a kid and Shoneys Big Boy was the big family outing, I’d always gross out the adults and get liver & onions. I freakin loved it.
Don’t eat it much as an adult. I was recently in England and made the side trip to Bath. There was a nice old pub near the Roman baths, and I had a lovely meal of lamb’s liver with bubble & squeak. Had a really good mushroom & onion gravy.

Fried liver was a staple at my parent's house growing up.. Also flank steak.. We would have those at least once a week. My mom never cooked the liver with onions.
