I’ve discovered kimchi!!!!

One of the few things I don’t care for is cooked cabbage, so kimchi was never on my radar. If you didn’t see my NYC thread a couple weeks ago, we stayed in Little Korea, and had kimchi for the first time. I really liked it.
While shopping at Costco today, I come across Korean bbq chicken, so I grab it to try (pretty damn good BTW).
I made some plain rice and then mixed in so kimchi I got from Costco, heating a little together.
That was a great meal.
Kimchi and rice is awesome.

Kimchi fried rice with this chili roasted Brussels and shrimps is one of my gotos. Sprinkle fresh basil,cilantro and mint on it and add a few thinly sliced jalapenos.

I use Kim chi for several things. I put it in turkey/cheese wraps. I put it in instant ramen. I put it in fried rice. I eat it out of the jar for a snack. I throw a pile of it for a side with meals.

With kimchi and an egg is my simple pleasure. Add some chicken or beef if you choose.
Check out kimchi jigae. It’s basically Asian cabbage soup and it’s spicy and delicious on a cold night. I just recently found a girl out of Alexandria, LA that makes it in her kitchen and it is outstanding.

I had kimchi in Korea. It was gross and smelled worse. I’m glad you are enjoying it though.

I get it at Alexandria farmers market . A Korean lady from Leesville makes it . Great Kimchi , also good on noodles .

Yes that’s her! They just did a delivery to Shreveport last week. It’s damn delicious, and so is the sourkraut.

Kimchi is delicious
Costco Kimchi? I bought to try last week, and I spit it out followed by throwing the entire thing in the trash. It was fricking horrid.

A little known fact is that the Korean spelling is Kimchee. Kimchi is the Japanese spelling carried over from Japanese occupation. You'll see it spelled both ways, but Kimchee is the true Korean way.

I've been a long time fan of Korean foods. Kimchee is very healthy and packed with probiotics and nutrients. I eat it with fried eggs, in soups or just plain from the jar. I get mine from several local Korean markets that are homemade as well as local restaurants that make their own. If I have to resort to store bought I used to like the 5000 Years brand although they did have a recall in 2021. I haven't actually had theirs since 2018 when I started buying local.

The best around here used to be at Cafe East across Clearview from Clearview shopping center but it is gone.
