Make hamburgers and freeze between wax paper. When ready throw frozen patty on hot grill, works great.

I made this Italian meatloaf with ricotta few weeks ago. We all enjoyed it. On Lidia's show, she used a marinara sauce. I used Rao's marinara with a little fresh oregano and parmesan rinds simmered in it a for a bit. Worked really well with it. The recipe just says "tomato sauce".

ETA: I didn't use the fresh mozzarella because I knew it was going to be reheated. She said the fresh mozz would not reheat well as it wouldn't melt again.

Also, brown it, drain it, and once it has cooled down some, scoop into freezer bags around 1 lb each and freeze. Next time you need to make spaghetti, lasagna, etc just toss the frozen hunk in the pan on medium and bust it up with a wooden spoon and it is ready for your sauce quickly. I buy the 2.5 lb packs twice a month, and cook whatever we're eating that night and freeze the rest already cooked.

This. I cooked that for dinner last night. My wife bought some hamburger patties at Chris' Specialty Meats. We had hamburgers recently, so I cooked them with onions and mushrooms and made a nice gravy.

What’s wrong with tacos? Try frying your own tortillas next time, good stuff.
