I made jambalaya again - Thank You FDB

A couple weeks ago, I made “jambalaya”. It came out bad, more like white rice with boiled pork.
I did take y’all’s advice, made the adjustments from what I did wrong last time.
It came out damn good (w/o Kitchen Bouquet)

The biggest things I took away from the last one:
Brown meat MUCH longer
Fresh onion/pepper
Toast the rice
2/3 beef broth - 1/3 water

Looks a little wet (mine comes out like that sometimes). Much better color than your last one. Great job.

When you're ready to make one again, keep it boiling until that rice swells some more while you stir. When it comes all the way to the top, then cut your fire down low and cover. Let it sit the same amount of time it simmers. I do roughly 10/10 minutes. That rice will split and you'll have less moisture.
The way I got consistent with the rice was to start never measuring rice or water when I made white rice. I used the ole first knuckle thing. Boil it until it swells. Cover. Cook 10. Rest 10.
Using the jambalaya calculator when I cook jamb now, I know what my rice needs to look like when I need to cover because practice.

How long do yall toast the rice? and then does that affect your cook time after you bring liquid to a boil then turn down and cover?
