I live in Scott and have been to Billy’s 2-3Xs tops. It’s always too packed to make me want to stop.
On a Saturday, they can do about 5K in sales in an hour easily.

Being in GA, I've never tried it. Just how much better than the competition could it possibly be? Does it live up to the hype? I mean, as someone else mentioned, boudin isn't exactly rocket science to make and, outside of seasoning combo, can't be that different from one maker to the next.

I can see that. I waited in line one hour at 9 am on a Saturday on the way to Tiger Stadium, and likely wont do that again, even though their product is great. They need to figure out how to streamline business purchases. They have two registers (and ladies) working the inside counter, and one working the drive-thru. That's not nearly enough. It's a good problem to have......They are losing business because the wait is too long. Billy's needs to figure out how to double their inside sales capacity and drive-thru capacity. Seems like it could be done with minimal cost. Just needs to flow better.

He was paying OT in cash. One of the employees got pissed and turned him in. Now their OT gets taxed. Billy smiled from ear to ear after that having pocketed lots of tax free money.

Alot better. Good boudin has just the right flavor. Joe blow in North Louisiana isn't about to make boudin even close to what Billy's is. You don't just throw pork and rice in a casing and it's good. Those good boudin places have perfected their recipes. But Billy's on your bucket list. You wont regret it.

As of 2014 bilies was selling 1.7 million boudin balls a year between the 3 locations.
I'd love to know the cost of a boudin ball. Probably not even 25-30 cents.
Now throw in all of the wraps, and other stuff, and the links of boudin. Also throw in that they are way more popular now than in 2014.
I'd bet they are doing like 10-15 mill easily. Every location is busy at all times of the day.
They also have a huge facility that they built in port barre to make the boudin. From what I understand they have a 1000 cup rice cooker or something crazy like that. Centralizing that in a huge efficient process probably saved them alot also.

I drop more than one hundred dollars in one order at Billy’s Monthly and it takes them maybe 5 minutes to fill it. I recognize I’m not the average customer but there are many sales guys that stop in there to bring some to their customers.

Yep. Right on Pont De Mouton
It doesn’t look to be as big as the new Krotz Springs location, but the buildings look identical (style wise) Maybe this will disperse some of the Scott location traffic. It’s only a couple of miles down the road

The number of people willing to wait in line for his product because it's friggin' delicious. That's it. He makes good stuff and people have learned that he makes good stuff. If he could get figure out how to streamline his service and get his efficiency to that of something like a Chik-Fil-A where he's able to get people in and out and through his drive through in five minutes, he'd likely make more money.
I don't stop anymore on the way through Scott because I just don't have the time to wait in line when I'm passing through. Make no mistake, though, before it got crazy busy, I'd stop and get a fatboy bag of cracklins a pepper jack boudin ball, and a boudin egg roll on every trip.

How do you figure he was smiling? He got caught by the Department of Labor. He had to repay all the overtime, pay a fine, adjust his taxes and pay the IRS the tax as well as the penalties, pay back insurance comp and general liability as well as all the matching taxes.
It cost all of those businesses a big chunk of money not the mention now he has the federal government and the state Department of Labor watching like hawks. They were scamming and got caught.

Well it really depends on how long he had been pulling it off.. there is a statue of limitations on the FLSA.. it is only 2 years and can sometimes be extended to 3... if he has been pulling it off for say 20years, he is still way ahead

Just left Billy’s in Krotz Springs and had a sampling of all the crawfish products.. the crawfish pie, pistolette, roll up and ball. The crawfish items are just as good as the boudin. He has the spice down and everything is hot and crisp. Delicious

If he was paying OT in cash, he could make up a number for the IRS because there is no paper trail. He came out like a bandit.
