Now subtract out cost of goods, labor, overhead, and any outgoing cash flows and that's what the owner makes.

I'd say if Billy's doesn't have any other owners then "Billy" makes about 1mil/year take home on $5mil in sales

One Friday around lunch time I was heading West on the Atchafalaya Basin Bridge on 190 and traffic was at a dead stop. I thought there was a wreck until traffic slowly started to move.. Stop and go over the Atchafalaya River bridge and when I got to the top of the bridge I saw the slow down was due to the 18 wheelers and vehicles pulling in and out of Billy's in Krotz Springs.

I've always maintained that a boudin shop somewhere in the vicinity of Tiger Stadium would print money like no one's business.

Like someone said, it’s rice, pork and seasoning for the most part so the biggest cost is going to be labor. I’d be willing to bet they are doing much better than the 20% margin in the above poster’s example

I wonder how much one of those Krotz Springs/Scott places actually could sell on one gameday from a festival type concession trailer like ones I've seen before at the South Gates near the airplane and all those big parking lots. They could probably move them all day long at $5 a link, not $5 a pound, too. The hardest part might be keeping the trailer supplied.

ETA: Also, you know, paying LSU their pound of flesh.

Gross margin, I'm sure they are. The boudin is probably like 75% margin or so if I had to guess, but you have to factor in paying for the expansion, taxes, regulatory compliance, etc. If an owner is netting more than 20-25% of revenue they are killing it

These places don't sell just boudin, though. In Billy's new location in Krotz Springs he's installing gas pumps and he'll have a grocery market to subsidize the sales. They also sell the boudin wraps, balls, pistolettes,smoked sausage and frozen boudin products. They also sell soft drinks, chips, snacks..

I was at a seminar in BR last year with around 200 people and when it was announced that someone had brought a lot of Billy's boudin there was a big rush on the breakfast bar.
