eaten a lot of Texas Brisket. His was the bottom. The dirty smoke for 3 hours makes the brisket bitter.
May have been a bad day.
I've been to his spot about 6 times since he was in his food truck days next to the coffee food truck. His product is a lot more consistent these days

Bar-A-BBQ in Montgomery is the best I've had.
This is the correct answer!

If you are coming from Louisiana you may want to consider RedBird BBQ in Port Neches, Tx.
The brisket is outstanding. But the star of the show was the pork ribs. Absolutely the best piece of food i have ever put in my mouth. I didn't know you can get ribs to be THAT good. Just incredible! I realized right then and there that my ribs are shite. lol And so is almost everybody else's.
Last year they were ranked #4 in Texas BBQ.
I believe the owner used to work at one of the popular BBQ joints in the Dallas area.

Pinkerton’s has the best actual bbq of the three for me…their sides could be better…at least at the original location…haven’t been to the new one in the Montrose yet. If you want pork ribs, this is the place for you.
The new Pinkerton's on Farnham has a lot more sides than the original, and they're pretty good.
I also prefer Pinkerton's pork, but a difference as well is they have a better vibe. Everything great about TX BBQ is encapsulated by their new location. Truth is incredible, but feels corporate in comparison.

You people done sold me on the fact I need to try Pinkerton’s. I haven’t even eaten anything yet this morning, despite running 5 miles at 6am, because my plan of I don’t get dragged into some lunchtime meeting between now and about 10:45 is to get over there.
I’ve read, granted Google AI, that while they don’t do a 2 meat plate, or something like that, I can order small stuff of meats. Doesn’t have to be 1 lb or half an lb per order.
So I’m thinking either 2 dry ribs, 2 wet ribs and a slice of turkey, or 1 dry, 1 wet, slice of turkey and slice of brisket with a side.

So I went to Pinkerton’s.
Two dry ribs
One sauced rib
Slice of brisket
Slice of turkey
Creamed spinach
First off…I need a freaking nap.
The dry ribs were fantastic. Melt in your mouth, fall off the bone, but it didn’t break apart while they cut them. I like the rub Roegel’s uses better, but Pinkerton’s is maybe my second favorite pork rib. The sauced rib was good, but I was expecting the sauced rib to be from a rack where they glazed the top of the rib while on the smoker, to where it tacks up and isn’t so “wet”. Still good, but I prefer the dry ones that I then put a dab of their sauce on if I please.
Brisket was very good, and could cut it with my fork. No knife needed. I think I still like the flavor of Feges brisket a tad more, but the tenderness of Pinkerson’s was something I don’t think I’ve had with brisket. The seasoning on the crust was very tasty as well.
Turkey…man, those who suggested the turkey at that place weren’t kidding. That was the best piece of turkey I’ve ever eaten.
Creamed spinach was good as well. The duck jambalaya sounded better, but I figured I needed some sort of vegetable to balance out all the meats for my lunch diet.
I agree with the above poster who said Pinkerton’s is the best all around BBQ meats of the Houston area joints I’ve tried.

The new Pinkertons location has fries that were dipped in beef fat. Incredible.
Also tried their turkey pimento sandwhich recently. So damn good.

I'm irrationally angry you did not provide even 1 photo.

I met the owner of Pinkerton's at LSU's spring testing back in 2007. He ended up going to UT I think, but I remember him running his mouth about his beer can chicken even at that age. Short little guy. Big mouth. Big truck. Loved all things Texas. Was a lot of fun to hang with that week and love that he followed his passion.

Great guy, as you said, enviable that he followed his passion. He had an affinity for BBQ at a young age apparently doing it in his parent's driveway. Crushing it and lives in a very nice area.
