Have tons of Okra. What can I make?

They are perfect looking. Got them from a farmer selling on the side of the road, Other than frying or gumbo, how can I cook them?

I prefer sauted over frying. I also put them in ramen and in a stew.

They're great sliced lengthwise and roasted until crispy in the oven, with salt and pepper. They're like chips, but also good on top of salads. I think MD on here gave me that idea.

Okra and tomatoes/ stewed is my favorite. I also like to add them to pots of fresh peas and bean. Fried of course. Olive oiled, seasoned and grilled or roasted. Pickled okra for bloodies. Gumbo. And it freezes great. I think okra is under appreciated. I learned this because I’ve always planted too much of it and have learned what to do with it.

I'll second this. I've been grilling okra for years and it is a favorite way to cook and eat them for many that I've turned on to it.

You can also smother it down with diced tomatoes, onions, garlic, a few splashes of Worcestershire and hot sauce and cook it on a low boil for about 2-3 hours. To add some moisture at the beginning, you can add plain water or even better, some stock.

I do about 5 gallons like this every summer and put it up in quart freezer bags to use in gumbo and soups I cook during the year.

ETA: Steamed okra whole and when done, hit them with lemon juice, olive oil, salt and pepper and you're good to go.

Another vote for grilled and pickline. I had a huge crop a few summers ago and put up several pints of pickled.
